- 2 Tbsps black Tea leaf (e. g. Earl Grey)
- 3 egg yolks
- ⅔ cup brown sugar
- 2 Tbsps honey
- ⅛ cup Rum
- 1 cup cream
- 4 mint
- powdered sugar (for dusting)

Preparation steps
1.
Bring the tea leaves to the boil with 125 ml water and infuse for 5 minutes. Strain and squeeze the leaves thoroughly.
2.
Beat the egg yolks, sugar and honey in a mixing bowl over a hot bain-marie, then cool, stirring. Add the tea and rum. Whip the cream stiffly and carefully fold in.
3.
Transfer the mixture to a loaf tin and freeze for 3 hours.
4.
To serve dip the tin briefly in hot water and turn out. Slice thickly and serve on plates dusted with icing sugar and garnished with mint leaves.
