- 3 large eggs
- 1 Tbsp lemon juice
- 1 unwaxed lemon (finely grated zest)
- 0.333 cup sunflower oil
- 1 cup honey
- 1 cup warm, black Coffee
- 2 ⅔ cups all-purpose flour (plus extra for coating)
- 2 tsps Baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp cream of tartar
- 1 cup xylitol
- 1 tsp ground cinnamon
- ½ cup chopped almonds
- 1 cup whole, blanched almonds
Preparation steps

Preheat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm x 32cm|9" x 13 baking tin and line the base with non-stick baking paper.

Whisk together the eggs, lemon juice, lemon zest, oil, honey and coffee in a mixing bowl until well blended.

Gradually add the flour, baking powder, bicarbonate of soda, salt, cream of tartar, xylitol and cinnamon, mixing until well blended. Fold in the chopped almonds.

Pour into the tin. Toss the whole almonds in a little flour to coat and arrange on top.

Bake for about 50 minutes, until a skewer inserted in the centre comes out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
6.
Cut into squares to serve.
