Preparation steps

1.
Pulse together the flour, cornflour, salt, icing sugar, lemon zest and butter in a food processor until it comes comes together to form a dough in the machine.

Remove the dough, knead gently and form into a ball. Wrap in clingfilm and chill for 60 minutes.
3.
Prepare the coloured sugar by placing the granulated sugar in a Ziploc bag. Add a few drops of red food colouring and seal the bag up.
4.
Shake well until the colour has distributed evenly among the sugar; use your hands to massage the sugar and help break up any clumps that might form.
5.
Pre-heat the oven to 180°C | 350F | gas 4.

Remove from the fridge and roll out on a lightly floured surface to 1/2 cm thickness. Cut out shapes from the dough using a small star-shaped cookie cutter.

Grease and line 2 large baking trays with greaseproof paper.
8.
Arrange the star-shaped dough on the baking trays spaced apart then bake for 10-12 minutes until they just start to colour.
9.
Remove from the oven and sprinkle immediately with the coloured granulated sugar.
10.
Allow them to cool on the sheets before transferring to a wire rack to cool completely. Serve the stars stacked on serving plates.
