Preparation steps
1.
On the work surface, make a mound of the flour, icing sugar, lemon zest and a pinch of vanilla paste. Make a well in the centre and break the egg into the well. Dot the butter around the edge. Using a knife, chop the mixture together, then quickly knead by hand to form a smooth dough that no longer clings to your hands.
2.
Separate approx. 1/5 of the dough and quickly knead in the nougat.
3.
Wrap both pieces of dough in cling film and chill for at least 1 hour.
4.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
5.
Roll out both pieces of dough on a floured surface to a thickness of approx. 3 mm. Cut large star shapes out of the pale dough, and small stars out of the nougat dough, and place on the baking tray. Bake in the centre of the oven for around 10 minutes.
6.
Carefully transfer the biscuits to a cooling rack and leave to cool.
7.
Stir the icing sugar and lemon juice together to form a thick glacé icing. Dab a little in the centre of each large star and place a small star on top. Press down gently and leave to set.
