- 500 grams Chicken breasts
- ½ Pineapple
- ½ small Papaya
- 1 Tbsp Lime juice
- 2 Bell pepper (Red and yellow)
- 100 grams Snow peas
- 100 grams Baby corn cob (from a jar)
- 2 Tbsps Peanut oil
- 1 tsp ginger (freshly grated)
- 100 milliliters Beef broth
- 2 Tbsps Rice vinegar
- 1 tsp brown sugar
- soy sauce
- Oyster sauce
- 1 tsp Starch
- Chili sauce (sweet and sour)

Preparation steps

Rinse chicken, pat dry and chop. Peel pineapple, cut out stalk and dice. Peel papaya, scrape out seeds and chop well. Drizzle with lime juice. Rinse bell peppers, trim and cut into strips. Rinse and peel peas.

Brown chicken in oil in a saucepan. Add peas, corn, bell peppers, pineapple and ginger and cook for 2-3 minutes. Deglaze with a little broth. Add vinegar, brown sugar, a little soy sauce and oyster sauce and cook until al dente, 4-5 minutes, adding broth as needed. Mix cornstarch with 1-2 tablespoons of water and stir into the sauce. Cook until slightly thickened. Add papaya, stir well and season to taste with chili sauce, oyster sauce and soy sauce. Serve with rice.
