- ½ cup cream (48% fat)
- 1 ⅔ cups white sugar-free chocolate (finely chopped)
- ½ cup roasted Hazelnuts (finely chopped)

Preparation steps
1.
Heat the cream in a pan and bring just to a boil. Remove from the heat and add the chocolate, stirring until melted and smooth.
2.
Stir in the hazelnuts. Cover and chill for 1-2 hours until firm.
3.
Line a tray with non-stick baking paper.
4.
Roll small pieces of the mixture into 20-24 balls. Put on the tray and chill for 1 hour until firm.
5.
For the coating: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
6.
Dip the truffles into the melted chocolate, one at a time, using a cocktail stick or skewer. Drain off the excess chocolate and put on non-stick baking paper to set.
