- 1 cup all-purpose flour
- 1 tsp Baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup xylitol
- ¼ cup Walnut oil (or sunflower oil)
- ⅓ cup honey
- 1 tsp vanilla extract
- ⅓ cup chopped Walnut

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Stir together the flour, baking powder, bicarbonate of soda, salt and xylitol in a mixing bowl.
3.
Whisk together the oil, honey and vanilla.
4.
Pour into the flour mixture and stir until almost combined. Add the walnuts and stir until the walnuts are evenly mixed.
5.
Shape pieces of the mixture into 12 rounded balls and place apart on the baking tray.
6.
Bake for about 10 minutes, until lightly browned. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.
