- ¾ cup butter
- ½ cup xylitol
- 1 egg yolk
- 1 ¼ cups all-purpose flour
- 1 tsp baking soda
- 1 pinch salt
- ¾ cup rolled oats

Preparation steps
1.
Beat together the butter and xylitol in a mixing bowl until creamy. Beat in the egg yolk.
2.
Sift in the flour, bicarbonate of soda and salt and stir until blended. Stir in the oats until well mixed. Chill for 30 minutes.
3.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.
4.
Drop teaspoons of the mixture, well apart onto the baking trays. Gently flatten them with the base of a floured glass.
5.
Bake for 10-12 minutes until golden. Cool on the baking trays for 2-3 minutes, then place on a wire rack to cool completely.
