- 3 ½ ozs plain Sugar-free dark chocolate (chopped)
- 1 tsp vanilla extract
- 2 tsps sugar free plain Yogurt
- 4 egg yolks
- 2 Tbsps Stevia
- 6 egg whites
- 1 Tbsp all-purpose flour

Preparation steps
1.
Heat the oven to 180°C / 350°F. Butter 4 soufflé dishes or individual ovenproof pudding basins.
2.
Melt the chocolate with the vanilla and yogurt in a heatproof bowl over a pan of simmering (not boiling) water, then set aside and leave to cool.
3.
Beat the egg yolks with the stevia until creamy, then slowly pour in the melted chocolate, beating constantly.
4.
Sift the flour over the mixture and gently fold in until blended.
5.
Whisk the egg whites until stiff and gradually fold into the chocolate mixture until well blended.
6.
Divide the mixture between the soufflé dishes and bake for about 15 minutes, until risen and puffy. Serve immediately
