- 4 Banana leaf
- 2 Tbsps olive oil
- 4 Sturgeons (each about 180 grams or approximately 6 ounces)
- 1 organic lemon
- 1 Red chili pepper
- Sea salt

Preparation steps

Rinse the banana leaves, pat dry and brush with a little oil.

Rinse the sturgeon, pat dry and place one piece in the center of each leaf. Rinse the lemon in hot water and wipe dry. Grate the zest, then juice. Rinse the chile, cut in half, remove seeds and cut into fine strips. Sprinkle the lemon juice over the fish, then sprinkle with lemon zest, salt and chile pepper. Drizzle with the remaining oil and fold the banana leaves into packets. Secure with toothpicks and grill for 12-15 minutes, turning regularly.

Serve immediately.
