Stuffed Peppers

- 1 onion
- 1 carrot
- 1 Fennel bulb
- ½ Eggplant
- 1 bunch scallions
- 2 yellow Bell pepper
- 2 red Bell pepper
- 2 Tbsps chopped parsley
- 2 Tbsps vegetable oil (for frying)
- 400 grams mixed Ground meat
- salt
- freshly ground peppers
- 250 grams Mozzarella
- 3 eggs
- 200 grams Whipped cream
- Nutmeg (freshly grated)
- Fat (for the pan)
Preparation steps
Preheat the oven to 200°C (approximately 400°F). Peel onion and chop finely.
Rinse vegetables and trim. Finely chop carrot, fennel and eggplant and then cut scallions into rings. Rinse bell peppers, trim, cut in half lengthwise, remove seeds and ribs.
Heat oil in a saucepan and fry ground meat until crumbly and season with salt and pepper. Add onion, diced vegetables and scallion rings add and saute briefly.
Cut mozzarella into slices.
Mix eggs and cream in a bowl and season with salt, pepper and nutmeg. Add parsley and egg mixture to the saucepan and stir. Fill bell peppers with ground beef mixture and place in a greased baking dish.
Bake peppers in preheated oven for about 15 minutes. Then cover each pepper with mozzarella and bake an additional 15 minutes until golden.
