1 Tbsp sesame oil
80 grams Cherry tomatoes (halved)
2 Tbsps sweet Chili sauce
2 Tbsps slivered almonds

Preparation steps

Halve the papayas lengthwise and remove the seeds. Scoop out some of the flesh, leaving about a 6 cm (approximately 2 inch) border around the skin. Cut the flesh into small pieces.

Cut the mackerel fillets into small pieces. Peel the cucumber, cut in half lengthwise, scoop out the seeds and dice. Heat the sesame oil in a wok and stir fry the fish for about 2 minutes. Add the cucumber and cook for 1 minute, then stir in the papaya, cherry tomatoes and chili sauce and cook for 1 minute. Remove from heat, fill the papaya halves with the mixture, top with almonds and garnish with lime wedges.
