500 milliliters fresh milk (1.5%)
1 Vanilla bean
1 pc Lemon peel (organic)
250 grams Arborio rice
60 grams sugar
400 grams fresh Strawberries

Preparation steps

In a saucepan, combine milk, vanilla (halved lengthwise) and lemon zest. Bring to a boil and add rice and 40 gram (about 3 tablespoons) sugar. Reduce heat to low. Cover and simmer 30-35 minutes, stirring several times.

Rinse, pat dry and hull strawberries. Cut strawberries into pieces. Divide berries among four bowls. Remove lemon zest and vanilla bean from rice. Divide rice pudding over strawberries and let cool completely.

3.

Before serving, sprinkle each serving with remaining sugar and ignite with a butane torch.
