2 egg yolks
80 grams sugar
1 packet Vanilla sugar
350 milliliters Whipped cream
200 grams fresh Strawberries (for garnish)

Preparation steps

Rinse strawberries, puree with lemon juice and pass through a fine sieve.

Combine egg yolks, sugar and vanilla sugar until creamy over hot but not boiling water. Cold beat and stir in strawberry puree. Beat cream until stiff and fold into mixture. Finish in an ice cream machine or freeze in a container for 5 hours, stirring occasionally during the first hours. Use an ice cream scoop to form balls and serve in bowls garnished with fresh strawberries and mint.
