2 ½ cups boiling water
1 Tbsp mint (chopped)

1 Tbsp Sesame seeds (to garnish)

Preparation steps

1.
Place the apricots in a casserole dish and cover with the boiling water.
2.
Add the chopped mint and bring the mixture to a simmer over a medium heat. Cover and cook for 12-15 minutes.

Remove from the heat and puree using a stick blender, making sure you maintain some texture.
4.
Spoon into serving bowls and garnish with the sesame seeds and a sprig of mint leaves.
