2 eggs (beaten)
1 cup self-rising flour (heaped)
½ tsp Baking powder
½ cup rolled oats
9 ozs red Plum (sliced)

1 Cutting board, 1 Small knife, 1 Box grater, 1 Large knife, 1 Small bowl, 1 Tablespoon, 1 Fork, 1 kleine Non-stick pan, 1 Slotted spatula, 1 Knife

Preparation steps

Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 450g|1lb loaf tin and line with non-stick baking paper, so that the paper comes at least 1cm|1/2" above the tin.

Beat together the butter, orange zest and sugar in a mixing bowl until light and creamy. Gradually add the eggs, beating well after each addition, and sprinkling in 1 tablespoon flour with the last of the egg.

Sift in the remaining flour and the baking powder and add most of the oats, stirring gently until blended.

Stir in 2/3 of the plums and spoon into the loaf tin, spreading level with the back of a spoon. Scatter the remaining oats over the top and arrange the remaining plums down the centre.
5.
Bake for about 1 hour, until firm to the touch and a skewer inserted into the centre comes out clean. Cool in the tin for 20 minutes, then place on a wire rack to cool completely.
