- 500 grams green Asparagus
- 250 grams Radish (with green)
- 1 Fresh herbs (such as wild garlic, arugula, or borage)
- 3 scallions
- 25 grams Pine nuts
- 2 Tbsps Canola oil
- salt

Preparation steps

Rinse the asparagus, peel the bottom third and trim woody stems. Cut into 5 cm (approximately 2 inch) pieces. Trim the greens from the radishes. Rinse the radish leaves and coarsely chop. Rinse the radishes and cut into quarters. Rinse the herbs, shake dry, pluck leaves from stems and chop. Rinse the scallions and thinly slice.

Toast the pine nuts in a dry skillet until golden and fragrant. Remove to a plate. Heat the oil in the skillet. Add the asparagus and cook for 3-4 minutes. Add the radishes and scallions, and cook for another 2-3 minutes. Stir in the herbs and radish leaves, and cook until wilted. The asparagus should be tender but have some bite. Season with salt and pepper to taste. Serve garnished with pine nuts.
