Steamed Cod with Spinach, Green Beans and Corn
Preparation steps
Rinse the fish, pat dry and drizzle with 4 tablespoons of the lemon juice.
Rinse the spinach and shake dry. Heat 2 tablespoons of the oil in a large saucepan set over medium heat. Add the spinach and cook until wilted. Season with salt and pepper to taste.
Rinse and trim the green beans. Cook in a pot of boiling salted water for 8 minutes. Drain. Drain the corn.
Pour some water and the remaining lemon juice in a pot and set over medium heat. Place the fish in a steamer and set on top of the pot. Steam, covered, for 8 minutes. Season with salt and pepper to taste.
Serve the fish on plates with the spinach, green beans and corn. Drizzle each portion with 2 tablespoons of the olives oil and sprinkle with lemon zest. Serve immediately. Serve with crusty white bread if desired.
