- 1 yellow squash (diced)
- 1 Zucchini
- ¼ cup Hazelnuts
- ¼ cup fresh mint
- olive oil (as desired)
- fresh lemon juice (as desired)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Using a mandolin, shave the yellow squash and zucchini into ribbons.
2.
Portion ribbons onto individual serving plates. Sprinkle hazelnuts and mint leaves equally over each plate of ribbons.
3.
Drizzle the salads with olive oil and a splash of lemon juice. Season with salt and pepper and serve.
