300 grams Oyster mushrooms

1 Tbsp coarsely chopped parsley
2 Tbsps lemon juice
2 Tbsps olive oil
1 Tbsp balsamic vinegar
4 slices Baguette
4 slices Mozzarella
1 tsp thyme

Preparation steps

Rinse the spinach and drain well. Clean the oyster mushrooms and if necessary cut into bite-size pieces.

Toast the bread until golden brown, top with the mozarella and bake until the cheese melts. Sprinkle the thyme over the top.

Place the spinach on the plates.

Peel the garlic and chop finely. Saute the garlic in hot oil until just fragrant. Add the mushrooms and saute until golden. Season with salt and pepper. Spoon the mushrooms over the spinach.

In a small bowl, whisk together the lemon juice and the oil. Season with salt and pepper. Drizzle the dressing over the spinach and mushrooms. Garnish with parsley and a slice of cheese toast.
