3 cups baby Spinach
6 slices thick-cut Bacon
½ small white onion (sliced)
1 clove garlic cloves (finely minced or pressed)
2 cups Mandarin orange (cubes)
3 Tbsps Red wine vinegar
½ cup slivered almonds (chopped)

Preparation steps

1.
Transfer the spinach and orange chunks into a salad bowl and set aside.
2.
Fry bacon in a skillet over medium heat. Cook until crisp about 10 - 15 minutes, then transfer to a plate lined with a paper towel. Pat bacon dry and crumble over salad.
3.
Pour out all but 2 tablespoons of bacon fat. Add the onions and cook until softened, about 1 - 2 minutes. Add the garlic and cook until fragrant, about 30 seconds.
4.
Add any orange juice that is left in the bowl and the red wine vinegar.
5.
Scrape up all the bacon bits that are stuck to the pan and add ground black pepper. Do not overheat, just warm.
6.
Pour the dressing over the spinach and quickly toss to evenly distribute the dressing.
7.
Divide among plates and sprinkle with almonds.
