- 4 medium sized Pear
- 500 milliliters white wine
- 1 ½ organic Oranges (zested and juiced)
- 5 Tbsps sugar
- 1 sm can Saffron
- 250 grams Goat cheese
- 50 grams Beet Greens
- 2 Tbsps toasted Pumpkin seed
- 4 parsley

Preparation steps

Peel pear, halve lengthwise and remove core. In a wide, deep skillet, boil wine, orange zest and sugar. Add pears and reduce heat. Cover and simmer for about 5-8 minutes over low heat until pears are al dente. Lift out pears with a slotted spoon and place on a plate. Simmer wine sauce for about 5 minutes until reduced and slightly thickened.

Add orange juice and saffron to wine sauce and simmer for another 2-3 minutes. Remove pan from heat. Add pears back into wine sauce and cover and let stand for 5-10 minutes. Rinse lettuce leaves and spin dry. Arrange pears, goat cheese and lettuce leaves on plates. Drizzle with wine sauce. To serve, garnish with pumpkin seeds and parsley leaves.
