Spiced Indian Kebabs

- 4 Chicken thigh (skinned, deboned and cubed)
- For the marinade
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- 1 tsp Garam Masala
- 1 tsp ground cinnamon
- 1 ½ tsps Tandoori spice mix
- 1 tsp caster sugar
- 1 clove garlic cloves (minced)
Chicken Tandoori Pittas Stuff the chicken pieces and cucumber into split pittas and drizzle with the yoghurt
Prepare the tandoori marinade by mixing together all the ingredients for the marinade in a mixing bowl. Add the chicken, mix well, then cover and chill for at least 1 hour.
Meanwhile toss the cucumber with the salt and leave to drain in a sieve to draw out excess water.
Mix the yoghurt with the mint, garlic and seasoning and set aside
Thread the chicken onto skewers and griddle or barbecue for about 10 minutes until cooked through.
Pat the cucumber dry, then serve alongside the skewers and minted yoghurt.
