- 1 ¼ cups very finely ground almonds
- ¼ tsp Sea salt
- ¼ tsp baking soda
- 1 tsp Mixed spice
- ½ unwaxed lemon (finely grated zest)
- 3 large eggs
- ¼ cup melted Coconut oil
- 3 Tbsps honey
- To decorate
- unrefined sugar
- ground cinnamon

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 6 holes of a doughnut tin.
2.
Stir together the almonds, salt, bicarbonate of soda, spice and lemon zest and put into a blender or food processor.
3.
Add the coconut oil, eggs and honey and blend until smooth.
4.
Pour the batter into the tin and bake for 10-12 minutes until just firm to the touch. Cool in the tin for 15 minutes, then toss in sugar and cinnamon to coat.
