- 3 ⅓ cups Greengage
- 3 Tbsps caster sugar
- 1 tsp crushed Black pepper
- 1 pc Brie ca. (400 g)
- Biscotti (cookies)

1 Tablespoon, 1 Teaspoon, 1 Small knife, 1 Cutting board, 1 Sieve, 1 Grill pan, 1 Plastic wrap, 1 Slotted spatula, 1 Wooden spoon, 1 Toothpick, 1 großer Pot, 1 Meat mallet
Preparation steps
1.
Wash the orange in hot water and pat dry. Finely grate the peel and squeeze out the juice.
2.
Remove the rosemary needles from the stem and chop finely.
3.
Wash the greengages. Slice in half and remove the stones. Press the cut sides firmly into the sugar.
4.
Heat a pan and pour in the oil.
5.
Put the greengages, sugar side down, in the hot pan and allow to caramelise.
6.
Deglaze the pan with the orange juice so the caramelised pieces come unstuck.
7.
Add the orange peel, rosemary and crushed pepper and swirl about.
8.
Allow to cool to lukewarm and serve with the brie.
9.
Garnish with the rosemary, orange peel and cantuccinis.
