7 ounces gluten-free, ginger Cookie (crushed to crumbs)
0.333 cup butter (melted)
2 teaspoons ground ginger
2 unwaxed lemons (finely grated zest and juice)
4 teaspoons Powdered gelatine
2 ⅛ cups cream cheese
1 cup Mascarpone
1.333 cups plain Yogurt
0.333 cup caster sugar
To decorate

Preparation steps

1.
Butter a 23cm|9" springform cake tin.
2.
Mix together the biscuit crumbs, melted butter and ground ginger. Press firmly into the base of the tin.
3.
Put the lemon rind and juice in a large bowl and sprinkle the gelatine over.
4.
Beat together the cream cheese, mascarpone, yoghurt and sugar until blended.
5.
Stand the bowl containing the lemon and gelatine over a simmering pan of water until the gelatine has dissolved. Remove the bowl from the pan.
6.
Gradually pour the cheese mixture over the lemon gelatine and beat until smooth.
7.
Pour onto the biscuit base and chill for at least 3 hours until set.
8.
Sift icing sugar over the top and decorated with ginger biscuits. Serve with whipped cream.
