½ cup dark Agave syrup
¾ tsp ground cinnamon (plus extra to garnish)
2 Tbsps Calvados
1 cup gluten-free all purpose flour (sifted)
1 cup Almond flour
½ tsp gluten-free Baking powder
½ cup coconut sugar
0.333 cup Coconut oil (melted)
1 large, ripe Banana (mashed)
mint (to garnish)

Preparation steps

Preheat the oven to 180°C (160° fan) | 350F| gas mark 4. Combine the apple juice, apples, agave nectar, and cinnamon in a baking dish, covering it with foil.

Bake for 40 - 45 minutes until the fruit is soft. Puree everything in a food processor until smooth and then pass through a sieve into a bowl.

Stir through the Calvados and then churn in an ice-cream maker according to the manufacturer's instructions. Once the sorbet is soft and frozen, scrape into a freezable container. Freeze for at least 4 hours.

Meanwhile, combine the flour, ground almonds, baking powder, and coconut sugar in a mixing bowl. Whisk together the coconut oil, 75 ml warm water, and the banana in a mixing jug.

Add the wet ingredients to the dry and mix well to combine. Press into six mini tartlet cases and arrange on a baking tray. Bake for 22 - 25 minutes until golden and firm. Remove to a wire rack to cool.
6.
Take scoops of the sorbet and position in the biscuit baskets. Serve with a garnish of ground cinnamon and mint.
