16 ozs cooking Apple (peeled, cored and sliced)
1 Tbsp lemon juice
1 cup unsalted butter
1 cup caster sugar
3 large eggs
2 cups self-rising flour
2 tsps Baking powder
1 pinch ground cloves
1 tsp ground cinnamon
cup Almond flour
½ cup Golden raisins
1 Tbsp brown sugar
To finish
powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a deep 23cm|9" cake tin and line the base with non-stick baking paper.

Toss the apple slices with the lemon juice and set aside.

Beat together the butter, and sugar in a mixing bowl until pale and fluffy. Beat in the eggs, 1 at a time, adding a little flour with each addition.

Sift the remaining flour, baking powder and spices into the butter mixture and fold in with the ground almonds. Drain the apple slices well, then stir about 2/3 into the mixture with the sultanas.

Spoon into the tin, lightly level the top and arrange the remaining apple slices on top. Sprinkle with the demerara sugar.

Bake for about 1 hour, until well-risen, brown and a skewer inserted into the centre of the cake comes out clean. If the cake browns to quickly, cover with a sheet of baking paper after about 45 minutes.
7.
Cool in the tin for 10 minutes. Remove the cake from the tin and place on a serving plate. Sift icing sugar over the top. Serve warm or cold.
