For the Mediterranean blend
25 grams Pine nuts
5 sundried Tomatoes (without oil)
100 grams stale white bread
1 sprig rosemary
1 sprig oregano
salt
For the fruity-spicy mixture
½ handful thyme
½ organic Orange
2 Tbsps dried Cranberry
2 Tbsps Salted almond
½ tsp colorful peppercorns
1 dried chili pepper
salt

Preparation steps

For the Mediterranean blend: Toast the pine nuts in a dry skillet until golden brown. Remove from the pan and let cool. Crumble the bread and place in a food processor along with the tomatoes and pine nuts and pulse to fine crumbs. The rosemary and oregano leaves pluck, chop finely and add to the mix. Season with salt and place in a bowl.

For the fruity-spicy mixture: Rinse the thyme, shake dry and strip the leaves. Zest the orange. Place half the orange zest, thyme, cranberries, almonds, peppercorns, and chile peppers in a food processor and finely grind. Season with salt and the remaining orange zest, mix and transfer to a jar.

To use, sprinkle 1-2 teaspoons of either mixture into a pan with melted raclette cheese and enjoy with potatoes.
