- 14 ozs Spaghetti
- 1 Tbsp olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (crushed)
- 3 ½ ozs Mushrooms (finely chopped)
- 4 ozs extra firm Tofu (finely crumbled)
- salt
- peppers
- 2 Tbsps tomato puree
- 25 ozs tomato passata
- 1 Tbsp light brown sugar
- 1 tsp chopped thyme
- 1 tsp dried oregano
- ½ cup vegetable stock
- To garnish
- ½ cup grated vegan cheese
- Basil

Preparation steps
1.
Cook the spaghetti in boiling, salted water according to the directions on the pack.
2.
Heat the oil in a pan and gently cook the onion and for a few minutes until translucent. Add the garlic and cook for 30 seconds.

Add the mushrooms and tofu and season with salt and pepper. Cook for about 5 minutes, until the mushrooms reduce in size and the tofu begins to brown.
4.
Stir in the tomato puree, passata, sugar, thyme, oregano, and stock until combined. Simmer for 5 minutes until heated through.
5.
Drain the spaghetti and place in warm serving bowls. Spoon the sauce on top and sprinkle with cheese. Garnish with basil.
