- 1 bunch Arugula (150 g)
- 1 shallot
- 2 garlic cloves
- 1 red chili pepper
- salt
- freshly ground peppers
- 400 grams Spaghetti
- 6 Tbsps olive oil
- 75 grams grated Parmesan

Preparation steps
1.
Rinse the arugula, drain thoroughly, and julienne. Peel and finely dice the shallot and garlic. Rinse the chili and halve lengthwise. Remove the seeds and finely dice.

Cook the spaghetti in boiling salted water until al dente.

Heat the olive oil over medium heat in a wide pan. Sauté the shallot until translucent. Add the garlic and chili, and sauté briefly.
4.
Drain the spaghetti, reserving 1 cup of the cooking water. Mix the spaghetti and arugula into the pan. Add a little of the cooking water, and season to taste with salt and pepper. Mix everything until combined, garnish with the parmesan cheese, and serve.
