- 7 ozs soybean
- 1 Leek (sliced and washed)
- 1 large carrot (scrubbed trimmed and chopped)
- 6 scallions (trimmed and chopped)
- 2 ½ cups hot vegetable stock
- To garnish
- 1 Tbsp parsley (chopped)
- 2 Tbsps Goat cheese (crumbled)

Preparation steps
1.
Put the frozen soya beans, leek, carrot and spring onions into a large pan with the vegetable stock. Bring to the boil and simmer for 20 minutes until the vegetables are tender.
2.
Add a stick blender to the pan and whiz together to make a smooth soup.
3.
Pour into bowls and serve garnished with chopped parsley and crumbled goats cheese.
