- 4 Tbsps olive oil
- 2 shallots (diced)
- 1 clove garlic cloves (diced)
- 1 ¾ cups yellow Lentils
- 2 ½ cups vegetable stock
- lemon juice
- Cumin powder
- 2 cups Mushrooms (sliced)
- 1.333 cups soft Goat cheese (sliced)
- 3 Tbsps Chives
Preparation steps
1.
Heat a tablespoon oil in a pot and fry the shallots and the garlic. Add the lentils and stir in the stock.

Simmer for 8-10 minutes. If necessary, add some more stock. Season with salt, ground black pepper, a dash of lemon juice and a pinch of cumin.
3.
Stir in the mushrooms and arrange the lentils on plates. Add the cheese, sprinkle with chives and serve drizzled with the remaining olive oil.
