- 4 Sweet potato (approx. 300 g each)
- 8 sun-dried tomatoes (in oil, drained, oil reserved, roughly chopped)
- 1 clove garlic cloves (crushed)
- ⅓ cup black Olives (pitted, finely chopped)
- 1 ⅓ cups sheep cheese (diced)
- 1 Tbsp lemon juice

Preparation steps
1.
Heat the oven to 220°C (200°C fan) 425°F, gas 7.
2.
Rub the potatoes all over with olive oil and wrap in pieces of non-stick baking paper, tying the ends with kitchen string.
3.
Place on a baking tray or in a roasting tin and bake in the oven for about 25 minutes until tender.
4.
Mix together the tomatoes, garlic, olives, cheese and 2 tablespoons of the tomato oil. Season with lemon juice, salt and ground black pepper.
5.
Carefully open the parcels and slit the potatoes lengthways. Gently pull open and spoon in the filling. Bake for a further 10 minutes to brown the cheese.
6.
If desired, serve in the baking paper.
