250 grams Fava bean
400 grams Soba Noodles
salt
1 red chili pepper
1 pc fresh ginger (about 3 cm)
1 shallot
2 garlic cloves
4 Tbsps olive oil
50 milliliters dry white wine
75 milliliters Vegetable broth
soy sauce
freshly ground peppers
2 sprigs mint
1 Tbsp scallions (thinly sliced)

Preparation steps

Rinse and drain the broad beans. Cook the soba noodles according to the package directions. Transfer to an ice water bath and drain well.

Rinse and trim the chili. Remove the seeds and membranes, and finely chop. Peel and finely dice the shallots, ginger, and garlic. Heat the oil in a pan, and sauté the garlic, shallots, and ginger. Add the broad beans, and briefly sauté. Add the chilis, then deglaze with the white wine and vegetable broth. Simmer gently for 5 minutes, season to taste with soy sauce and pepper, and let cool. Rinse and dry the mint. Finly chop the leaves, and mix into the beans. Mix the soba noodles and scallions into the bean mixture and toss to combine.
