- 12 thin slices Smoked salmon (200 grams)
- 1 Cucumber
- juice of lemons
- ½ bunch Chives
- 1 garlic clove
- 1 shallot
- 2 Tbsps grapeseed oil
- 1 Tbsp honey
- 1 Tbsp sharp Mustard
- 2 Tbsps White vinegar
- 2 Tbsps sunflower oil
- 4 tsps Whitefish caviar
- salt
- freshly ground pepper

Preparation steps

Cut chives into small rings.

Peel cucumber, halve lengthwise, scrape out the seeds with a spoon and cut into small dice. Peel and finely chop the shallot and garlic. In a bowl, mix together the cucumber, garlic, shallot, grape seed oil and lemon juice, season with salt and let stand 5 minutes. Stir in 3/4 of the chives.

In a bowl, whisk together the honey, mustard, white wine vinegar, sunflower oil and 2 tablespoons water, season with salt and pepper and stir in the remaining chives.

Set an 8 cm (approximately 3-inch) ring in the center of each of 4 plates and spoon in the cucumber mixture. Spoon 1 teaspoon of the caviar into each.
5.
Arrange the salmon around the salad and drizzle with honey mustard sauce. Serve immediately.
