12 thin slicesSmoked salmon (200 grams)
1Cucumber
juice of Lemons
½ bunchesChives
1Garlic clove
1Shallots
2 tablespoonsGrapeseed oil
1 tablespoonHoney
1 tablespoonsharp Mustard
2 tablespoonsWhite vinegar
2 tablespoonsSunflower oil
4 teaspoonsWhitefish caviar
Salt
freshly ground pepper

Directions

1 Cut chives into small rings.
2 Peel cucumber, halve lengthwise, scrape out the seeds with a spoon and cut into small dice. Peel and finely chop the shallot and garlic. In a bowl, mix together the cucumber, garlic, shallot, grape seed oil and lemon juice, season with salt and let stand 5 minutes. Stir in 3/4 of the chives.
3 In a bowl, whisk together the honey, mustard, white wine vinegar, sunflower oil and 2 tablespoons water, season with salt and pepper and stir in the remaining chives.
4 Set an 8 cm  (approximately 3-inch) ring in the center of each of 4 plates and spoon in the cucumber mixture. Spoon 1 teaspoon of the caviar into each.
5 Arrange the salmon around the salad and drizzle with honey mustard sauce. Serve immediately.
