- 1 Iceberg lettuce (shredded)
- ½ Cucumber (peeled, seeded, and cut into thin batons)
- flat-leaf parsley (chopped)
- mint (chopped)
- 1 Granny Smith Apple (cored and thinly sliced)
- salt
- freshly ground Black pepper

Pound the escalopes out with a meat tenderiser before slicing and marinading for faster cooking times.
Preparation steps
1.
Whisk together the paprika, cumin, sugar, lemon juice, and seasoning in a mixing bowl. Add the turkey and toss well to coat.
2.
Heat the oil in a large frying pan set over a moderate heat until hot. Add the turkey and fry for 6 - 7 minutes, turning occasionally, until golden and cooked through.
3.
Toss together the lettuce, half of the cucumber batons, and the parsley. Lift onto plates and top with the chopped mint and then the turkey.
4.
Garnish with the remaining cucumber and the slices of apple on top before serving.
