Chicken Escalopes with Zucchini
1 Baking sheet, 1 Bowl, 1 Teaspoon, 1 Hand mixer, 1 Immersion blender, 1 deep bowl, 1 Parchment paper, 1 Oven rack
Heat the grill.
Flatten the chicken fillets with a mallet. Brush with half the oil and season with salt and pepper.
Grill for about 4 minutes on each side until cooked through.
Whisk together the remaining oil, lemon juice and vinegar. Set aside.
Using a vegetable peeler, peel thin ribbons from the courgettes. Gently mix the ribbons with lemon juice mixture.
Place the courgette ribbons on a serving plate and place the chicken on top. Garnish with diced tomato.
