- 4 eggs
- 2 small shallots (sliced into fine rings)
- 4 Tbsps rapeseed oil
- 3 Tbsps Vinegar
- 1 tsp grainy Mustard
- sugar
- 7 cups young Spinach
- 7 Radish (finely sliced)
- 1 ⅓ cups boiled ham (unsliced, cut into strips approx. 5 cm long and 1 cm wide)

Preparation steps
1.
Hard boil the eggs, refresh in cold water, peel and leave to cool. Cut into quarters when cooled.
2.
Fry the shallots in a small frying pan in 1 tbsp oil until lightly coloured.
3.
Stir together the vinegar, mustard, oil, a pinch of sugar, salt and ground black pepper to form a vinaigrette.
4.
Mix together the spinach, radishes, shallot and ham in a large bowl with the vinaigrette. Leave to infuse for 5-10 minutes.
5.
Arrange the salad on plates with the egg quarters and serve.
