- 4 cups waxy potatoes (peeled and grated)
- 1 small egg
- 1 tsp Corn starch
- Nutmeg
- clarified butter (for frying)
- 3 cups Black pudding (sliced)
- parsley (to garnish)

Preparation steps
1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and grease a dish with butter.
2.
Cut the apples in half horizontally and place in the prepared dish. Bake in the middle of the oven for around 45 min.

Place the potatoes in a tea towel and wring out well. Mix with the egg, cornflour, salt, white pepper and a pinch of nutmeg.
4.
Place spoonfuls of the mixture in pan of hot clarified butter, press flat and fry for 3-4 min until golden brown. Turn and fry on the other side until golden brown. Keep warm in the oven until all the other cakes are done.
5.
Quickly fry the black pudding in hot clarified butter on all sides. Arrange on plate with the potato cakes and the apples and serve garnished with parsley.
