- 1 Tbsp butter
- 2 Tbsps olive oil
- 1 onion (chopped)
- 2 cloves garlic cloves (chopped)
- 1 ⅔ cups Risotto
- 4 ½ cups Vegetable broth
- ¾ cup Parmesan (freshly grated)
- 4 Tbsps Hazelnuts (roughly chopped)
- 2 Tbsps parsley (chopped)

Preparation steps
1.
Heat the butter and oil in a skillet and fry the onion, garlic and rice until transparent.
2.
Gradually add the broth, stirring all the time, for approx. 20 minutes until the rice is cooked.
3.
Just before serving, stir the parmesan into the risotto and season with salt and ground pepper.
4.
Roast the cob nuts in a pan without fat. Serve the risotto on plates, sprinkled with cob nuts and parsley.
