- ⅜ cup olive oil
- 2 large, skinless Chicken breasts (sliced)
- 2 large, ripe Avocados (pitted and sliced)
- ½ lemon (juiced)
- 2 Tbsps white wine vinegar
- 1 tsp sugar
- 4 cups baby Spinach
- 1 red pepper (seeded and diced)
- salt
- Black pepper

Preparation steps
1.
Heat 2 tbsp of the olive oil in a large frying pan over a moderate heat then season the chicken strips.
2.
Pan-fry the chicken for 5-6 minutes, stirring occasionally until cooked.
3.
Meanwhile, dress the avocado slices with the lemon juice, tossing to coat evenly.
4.
Whisk together the white wine vinegar, sugar, remaining olive oil and seasoning to make a dressing.

Arrange the spinach in even layers on serving plates and top with the slices of avocado, the diced red pepper and strips of the cooked chicken.
6.
Drizzle the dressing over the salad and season again with black pepper. Serve immediately.
