200 grams Long grain rice
4 scallions
1 garlic clove
2 garlic cloves
150 grams shrimp (oven-ready, pre-cooked)
5 Tbsps sunflower oil
2 Tbsps soy sauce
1 Tbsp Tomato paste
2 tsps Sambal oelek
4 eggs
freshly ground peppers
For the garnish
¼ Cucumber
4 Tbsps fried onion (Finished product)
4 leaves fresh cilantro

Preparation steps

Cook the rice according to package directions.

Peel garlic and chop finely. Slice the scallions on the diagonal. Heat 1 tablespoon oil in a skillet, crack 4 eggs and fry them in the pan, sprinkle with coarsely ground pepper. Heat the remaining oil in a wok or deep skillet and sauté the scallions and garlic until tender. Add the rice and shrimp and saute briefly.

Add the soy sauce, tomato paste and the sambal oelek, and stir-fry until the shrimp are cooked and the rice is heated through. Arrange on plates and top each with a fried egg. Rinse the cucumber and thinly slice, place on top of the rice along with the fried onion rings. Rinse the cilantro, shake dry and garnish the rice with the cilantro.
