- 18 small shrimp (poached)
- 2 spears raw Asparagus (finely sliced, horizontally)
- ¼ cup red Bell pepper (finely sliced)
- 2 Tbsps fresh Chives (chopped)
- 1 shallot (minced)
- 3 Tbsps olive oil
- 1 Tbsp Lime juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup Arugula
- 6 pcs rustic Bread (grilled or toasted)
Preparation steps

In a medium bowl, combine shrimp, asparagus, red pepper, chives and shallot. Drizzle with olive oil and lemon juice and toss well. Season with salt and pepper.

Place a few arugula leaves onto each pieces of bread. Top with a portion of the shrimp and asparagus mixture. Serve.
