14 ozs Udon Noodle
2 ⅔ cups shrimp (peeled and deveined)
1.333 cups Broccoli
1 red Bell pepper
2 cups sugar Snap pea
2 scallions
2 cloves garlic cloves
1 Chili
1 Tbsp Sesame seeds
3 Tbsps sesame oil
Fish sauce

Preparation steps

1.
Cook the noodles in boiling, salted water until al dente, then drain, refresh in cold water and drain well.

Wash and dry the shrimp.
3.
Wash and drain the broccoli.
4.
Wash, halve and core the bell pepper and cut into strips.
5.
Wash and trim the sugar snap peas.
6.
Wash and trim the scallions and cut into rings.
7.
Peel and finely chop the garlic.
8.
Finely chop the chili.
9.
Heat the oil and saute the sugar snap peas, bell pepper, garlic, sesame seeds and chili. Then add the rest of the vegetables and stir-fry for 3-4 minutes. Add the noodles and shrimp and stir-fry for a further 2-3 minutes, until all the ingredients are cooked but still have a little bite. Season well with fish sauce and serve.
