- 1 pkg dried Fettuccine
- 1 Tbsp olive oil
- 1 red Bell pepper (rinsed; trimmed and cut into strips)
- 2 cloves garlic cloves (peeled and minced)
- 3 cups uncooked, medium shrimp (peeled and deveined)
- 1 cup low-sodium Chicken broth
- 1 Tbsp shredded Lemon peel
- fresh, chopped parsley (italian)
- 1 sliced lemon (to serve)

Preparation steps

Prepare pasta according to package instructions until al dente.

Meanwhile, in a large skillet, heat olive oil over medium heat. Add pepper strips and saute for about 3 to 4 minutes. Add garlic, cook and stir for about 30 seconds. Add shrimp and chicken broth to the skillet. Cook, stirring frequently until shrimp are opaque, about 3 to 4 minutes. Add pasta and toss with shrimp mixture.

To serve, divide pasta between four serving bowls. Sprinkle with shredded lemon peel and parsley. Garnish plates with lemon slices for drizzling.
