Ingredients

For the Salad Dressing
1 ½ Tbsps olive oil
1 Tbsp Lime juice
1 pinch salt
freshly ground Black pepper (to taste)
1 tsp fresh thyme
crushed Red pepper flakes (to taste)
For Salad
5 cups mixed greens (washed and gently spun dry)
½ medium Cucumber (thinly sliced)
½ red Bell pepper (washed; trimmed and finely sliced)
½ Red onion (peeled and diced)
1 ripe Papaya (peeled; seeded and cut into cubes)
2 tsps extra virgin olive oil
3 cups large shrimp (20-25 per pound); rinsed; peeled and deveined
¼ cup fresh cilantro (finely chopped)

Preparation steps

For Salad Dressing:

In a small bowl, combine olive oil, lime juice, salt, pepper, thyme and chili pepper flakes. Set aside.

In a large salad bowl, combine mixed greens, cucumber, sliced red pepper, and papaya.

Heat olive oil in a large nonstick skillet over high heat. Add shrimp to skillet and cook for 1 to 2 minutes or until edges turn pink.

Remove skillet from heat, turn shrimp with tongs, and add cilantro. Cover skillet and let sit for

to 3 minutes. The heat from the skillet will cook the shrimp until pink and firm. Do not overcook.

Drizzle salad with prepared salad dressing and gently toss. Divide salad evenly between plates and top each salad with equal amounts of shrimp. Serve.
