- 100 grams mixed Fresh herbs (to taste)
- ½ tsp Mustard
- 1 small shallot
- 1 tsp sugar
- 100 milliliters olive oil
- 5 Tbsps Sherry vinegar
- salt
- white peppers

Preparation steps
1.
Peel the shallot. Rinse and dry the herbs, then remove the leaves. Finely chop the shallots and herbs.

Combine all the ingredients in a bowl, whisking vigorously. Season to taste with salt and pepper.
