Add the mustard and orange juice in a bowl, and season with to taste with the pepper.

Whisk the mixture until thoroughly combined.

Add the vinegar, and whisk until combined. Gradually incorporate the oil in a thin stream, whisking constantly.

Season to taste with honey and salt.

Toast the nuts in a dry pan. Remove from the heat, cool slightly, and chop. Mix the walnuts into the vinaigrette, stir to combine, and serve.
