- 6 ripe Persimmon
- 14 ozs canned Lychee
- 2 Tbsps honey
- fresh Lime juice
- 2 sprigs mint (roughly chopped)
- crushed Ice (to serve)

Preparation steps
1.
Cut the persimmons in half and scoop out the flesh.
2.
Place the persimmons in a blender with the lychees and their juice and blend until smooth. Add the honey, lime juice and chopped mint and mix well.
3.
Pour the juice into a jug filled with crushed ice and serve immediately.
